I did a month ago on a full e-commerce site and love it. A couple things still require backwards compatibility plugin enabled but not for much longer.

Maybe check your PHP version? Are you running Joomla 6? Confirm backwards compatibility plugin is enabled perhaps for your setup?

Watch out for version 3 as it breaks without very latest YTP. This one should be latest stable.

Has there been any update to this component? It is sad the official site doesn't even keep up with change logs to see what version is working with J5.4 or J6

I love Yootheme stuff and this is such a great tool to extend it all.

Is everyone just running this manually now since the license traps the cron functionality?

Yes and there is a whole Yootheme override with Phoca Cart elements and onepage checkout called PCuikit. Be careful with the one page checkout template as it is not fully developed.

This is a very useful extension with a beautiful UI. Be mindful how it places and SVG file on your pages though.
