V8x email sending code in the "Invoice" email template.

I need Prestashop 8 to send a blind carbon copy of every e-mail sent to anyone, to a fixed email address.

Is there a way to do this placing a modified Mail.php in /classes/override ?

What would be the parameters to change/add?
