I think best in PageSpeed Insights for latest PS 8.0.x is Falcon theme (https://github.com/Oksydan/falcon). But on the other hand, you will get an almost empty template without additional modules. So I'm looking at the Alysum template now. Unfortunately, even after years it has annoying bugs, but at least you will have a good balance between speed and what you get out of the box.
