Most theme from shop will be hard to edit if you are unfamiliar with coding, they just look nice as a demo.

If you starting with prestashop try theme with easy customization like as:

Theme Warehouse

In this theme you can change everything form presta - style, colors. This theme also have some goods addons like Megamenu - this is very easy to configuration.

Best thing is Creative Elements - You dont need paste HTML code, only drag and drop blocks
Very usefull for new users
