How do I set up payment acceptance on my website if I have another country and need to make a dedicated payment for that country in the currency it uses? The other country can pay in its own currency. This means paying for services separately by country.

I'm not clear on what you're wanting as a solution to be honest (am new to all of it: osclass, plugins, online payments, etc..) but that aside, the PayPal Advanced Checkout plugin supposedly handles currency conversions "across borders" on the backend while customers pay with their credit and debit cards (not needing a PayPal account).

If you had this installed, were your questions related to this or were you considering configuring or modifying different payment gateways?

You misunderstood. There's an unrecognized country with its own currency and banking system. I receive all the bank details because I'm a legal entity in that country and need to split payments in an unrecognized currency. So, the other two countries with recognized currencies work through, say, Ray Pal, but for the unrecognized currency, for payments by residents of that country, I need a way to separate payments. That is, the ability to split payments. I'll write a plugin for the unrecognized currency myself, but my question is more global.
